Kirby cucumbers are synonymous with pickling cucumbers. Known for their small size and popularity, Kirby cucumbers are quite firm and have bumps along their entire body and very few seeds. They have a very crunchy consistency and are also excellent for salads or diced up for salsa. Kirby cucumbers are slightly less juicy on average than traditional cucumbers.
